One of summer’s tastiest gifts is a basket of juicy ripe tomatoes fresh from the vine. With a day’s work and a little know-how, you can enjoy your bounty of summer tomatoes year-round.
Not only do home-grown tomatoes taste delicious (BLT, anyone?), they’re packed with vitamin C, vitamin A and powerful antioxidants known for fighting cancer and disease.
Preserve them in a number of ways:
• Peel and freeze (whole or chopped) for use in sandwiches, salads and cooked dishes.
• Can tomatoes using a boiling water canner or pressure canner.
• Dry tomatoes using your oven or a dehydrator and store them in the freezer in an airtight container.
