Horseradish provides a pungent punch to a variety of recipes, from mashed potatoes to coleslaw to pork tenderloin. What’s more, Illinois is a hotbed for horseradish growers, thanks to its soil that’s rich in potash, a nutrient that feeds healthy horseradish production.
