Onion Apple Chutney
Great with grilled or roasted pork, this dish combines sautéed onions and spiced apples.
2 Tablespoons vegetable oil
2 large onions, cut in half and thinly sliced into half moons
2 Tablespoons dark brown sugar
1 large Braeburn apple, cut into 1/2 inch slices
1/4 cup chicken broth
2 Tablespoons currants
1/2 teaspoon lemon zest
1 bay leaf
Salt and pepper to taste
In a large skillet, heat oil over medium-high heat. Add the onions and cook for 3 minutes. Reduce heat to medium-low and cook 10 minutes, stirring frequently. Sprinkle the sugar over the onions, mixing well, and cook until onions are soft.
Add remaining ingredients and cook over medium heat until apples are tender. Remove bay leaf, and season with salt and pepper to taste.
