
It may only be 3 years old, but Local Cup & Cake in Sublette has already become a staple in the quaint Illinois town.
“We have a small space with only eight seats inside the bakery, but there’s a lot of love there,” owner Kristy Dauck says.
Open for breakfast and lunch six days a week, Local Cup & Cake offers a different weekly drink special, like cinnamon roll mocha or almond honey latte, and a daily breakfast cup, such as ham and potato or sausage gravy.
“We can’t have large gatherings, but a lot of moms meet for coffee to socialize, and their kids have a place to play,” Dauck says.
When Dauck and her husband, Jake, first discovered the bakery was for sale, they purchased it three days later.
“It was a very quick decision, but we knew it was right,” she says.

Dauck, who holds a culinary degree from Le Cordon Bleu College of Culinary Arts in Chicago, majored in baking and pastry before working in many facets of the restaurant business, but she always gravitated to baking. Before buying the bakery, she had a busy career of baking custom cakes out of her house.
In her role as bakery owner, she’s become known for buttercream-frosted cupcakes.
“I don’t work with fondant, but love to work with buttercream – not the typical buttercream, but a nice, light, fluffy, smooth style,” she says.

Most popular at Local Cup & Cake are white chocolate cupcakes with raspberry puree filling topped with a classic buttercream and Death by Chocolate cupcakes with fudge chocolate cake, chocolate ganache filling and rich chocolate buttercream frosting.
Winter can be a slower season, but pies help add extra business around the holidays. Popular varieties are raspberry cream, Oreo and pumpkin pies, with the caramel nut pie ordered most often.
“Pie orders keep us busy,” Dauck says. “Sometimes we bake a couple hundred pies in November and December.”
