Employing two simple strategies guarantees your family will enjoy a healthy and tasty meal in minutes. For starters, delight in your deli counter and splurge on precooked proteins like chicken or turkey. Many come deboned and shredded. Also, learn to love leftovers, or should I say, planned overs. That way you can transform last night’s pasta into a refreshing salad loaded with veggies. Here are four of my favorite assemble-and-eat, no-cook dinners.

For a light and breezy dinner, try my go-to summer “fav,” Pork Loin Summer Rolls with Green Curry Dipping Sauce. Pork roast from the deli makes this meal a snap to make. Toss the pork with a prepackaged coleslaw blend, then wrap and roll the filling in brown rice paper. It takes time to work with brown rice paper, so don’t be frustrated if a few pieces tear. The dipping sauce adds the perfect blend of sweet with heat.
